Introduction

Magnus hvalmagi (called Magnus the Stout) joined the SCA in May 2010 (at the insisting of his lady Finnguala), attending the War of the Roses in Concordia as his first event.

As the nickname may suggest, Magnus enjoys brewing of all sorts - beer is his specialty. He is also a storyteller and poet in the skaldic tradition. He is formerly apprenticed to Master Toki Redbeard, is a resident of the Vestfell Farmstead, and resides in the Barony of Concordia of the Snows.

As the nickname may further suggest, Magnus likes to play around with cooking, and is known for having ample, tasty meat.

In the mundane world, Peter Olsen is a food safety microbiologist working for a government regulatory agency. He is particularly interested in sensible food production practices, adequate and accessible food safety communication, and the debunking of various public health myths - including many tied to food.

Peter's other interests include tabletop gaming (board games, pen-and-paper RPG's, card games, etc), electronic gaming, metal music (the louder the better!), cooking, baking, beer brewing, meat curing, and driving too fast.

Dependents

Magnus has two students - Skarpheðinn inn havi and Þórfinnr Hróðgeirsson.

Skarp is learning the art of brewing (well, he's quite accomplished at it, but learning is ongoing) and is a fighter for Eld Vatten. Þórfinnr makes strange beverages from a strange land far to the East.

Persona

Magnus' family fled Norway in 925 to get away from the tyrant Harald; following in the steps of many others, they settled in Iceland. Magnus was born in 982 in southern Iceland.

Magnus is privately a pagan who preserves the traditions of his family. He doesn't have a problem with Christianity per se - he just sees very little need to change his outlook on life.

His public face is one of a mild Christian, because it makes trade and such substantially easier.

Magnus has won a fair bit of notoriety and respect among his people. They call him "lærifaðir;" in another language, it means "lore-father." Others call him "master," but he prefers the words of his language.

Brewing with Egil - A summary of Viking-era ale production research to-date - including developing a specific recipe.

Take a Cock and Boil Him Well - my adventures in reproducing Digby's cock ale, using a heritage breed of rooster

An Applied Approach to Viking-era Brewing - Building on the method reconstructed from archaeological evidence, I present notes and ideas about translating the principles of Viking-era brewing into a more modern production system

Brewing With Grandpa - K&Q A&S, A.S. L - Using a variety of sources, I fill in the gaps of a written method for producing a 16th century CE Scandinavian beer. The project is composed of 3 parts: reconstructing the malting method (and the malt itself); reconstructing a rotary hand quern; and reconstructing a plausible recipe from the information available.

A Systematic Approach to Historic Reconstruction - My attempt to capture my research philosophy and approach in a manner accessible enough to teach as a class. First half is philosophy, second half is an example of that philosophy applied to recipe redaction.
