Ran a series of workshops ''(5 in total)'', in conjunction with [[Monkey Makgee]] to recreate various dishes from the Opera of [https://en.wikipedia.org/wiki/Bartolomeo_Scappi|Bartolomeo Scappi] of 1570. 

Each of these workshops focused on 1-3 dishes from the text and would involve redacting the recipes ''(for modern available ingredients as well as translating the measurements)'', preparing several versions of the dish ''(based on various ingredient measures and/or substituted ingredients for unavailable ingredients)'', as well as serving them to a group of tasters and aspiring Head Chefs to receive feedback and make adjustments.
